Potassium metabisulfite dosage for mead: 50-100 ppm

Potassium metabisulfite is added to mead at 50-100 ppm to inhibit unwanted microorganisms and prevent oxidation. This typically translates to 0.15-0.3 grams per gallon (3.8 L) of must. For stabilization before backsweetening, use 0.15 g/gal; for long-term storage, use 0.3 g/gal. Always dissolve in a small amount of water before adding to the must.

Potassium metabisulfite dosing chart

Purpose ppm Grams per gallon Teaspoons per gallon
Initial stabilization 50 0.15 0.05
Standard protection 75 0.23 0.08
Long-term storage 100 0.30 0.10

Application methods

  • Direct addition: Dissolve powder in 1/4 cup warm water, then mix into must
  • Campden tablets: One tablet contains ~0.44 g; use 1/3 tablet per gallon for 50 ppm
  • Timing: Add after fermentation completes and must is below 70°F (21°C)

Safety considerations

  • Wear gloves and eye protection when handling
  • Avoid inhaling powder
  • Label containers clearly
  • Keep away from acids (releases sulfur dioxide gas)
